Green Pea, Mint & Ginger Soup
1 onion, diced
5 cloves garlic, peeled
1/2 red chilli, chopped
2 tbsp fresh ginger, chopped
1/4 tsp cumin powder
4 cups frozen peas
6 cups water
1 tbsp salt
juice 1/2 lemon
1 handful fresh mint leaves
Place the onion, garlic, red chilli, and ginger into a blender. Add the cumin powder and half a cup of water cup water. And puree into a paste.
Heat a large saucepan over a high heat. Add the puree mixture and saute for 1 minute. Add the frozen peas and the remaining water. Add the salt and stir well, then cover with a lid and bring to the boil.
Remove from heat and pour the soup into a blender. Add the mint leaves and puree until smooth. Pour the pureed soup back into the saucepan, add the lemon juice and season with salt and pepper to taste. Mix well and serve in 4 individual bowls.
