Mushroom & Snow Pea Green Curry
4 large mushrooms, thinly sliced
1 handful snow peas, top and tailed
1 tin coconut milk or 1 young green coconut (see recipe)
1 cup frozen peas
1 tbsp green curry paste
1 tbsp soy sauce
1 bunch mint leaves, stems removed
2 cups cooked brown rice to serve
Heat a fry pan and lie the sliced mushrooms in the pan and cook over high heat to brown each side. Season with salt.
Heat a wok and add a splash of coconut milk. Add the green curry paste and mix well, then add the remaining coconut milk. Add the peas, snow peas and the soy sauce and stir over a high heat for 1 minute, then serve.
To serve, place some of the pea curry into a shallow bowl and place some mushroom slices on top. Finish with some fresh mint leaves and serve with cooked brown rice.
