Red Lentil Dal with Brown Rice, Lime Pickle & Mango Chutney
2 tomatoes, grated
1 medium onion, finely diced
2 cloves garlic, crushed
1 handful fresh coriander leaves, chopped
1 lemon, juice only
1 tsp ground cumin
1 tsp ground coriander
1 tsp turmeric
1 tsp garam masala
2-3 bay leaves, to taste
1 cinnamon stick
2 cup uncooked red lentils
4 cups water
salt, to taste
served with lime pickle, mango chutney and cooked brown rice.
Heat a frying pan, add the onion and garlic and saute for 1 minute. Add spices, bay leaves, cinnamon stick, tomatoes, red lentils and 4 cups of water. Bring to boil and then simmer, covered for 15 minutes, stirring regularly. Add the garam masala and the lemon juice and season with salt to taste. Top with chopped coriander and serve with brown rice, lime pickle and mango chutney.
