Sauteed Mushroom & Kale with Avocado & Tomato on Sourdough

(serves 2)


4 slices sourdough bread

4 mushrooms, sliced

1 handful of kale, shredded

1 tomato, sliced

¼ lemon, cut in half

½ avocado, seed and skin removed

salt to taste


Place the sourdough into a the toaster. Heat a frying pan on a high heat. Add the sliced mushrooms and saute for a couple of minutes until they have softened. Add the chopped kale and a splash of water, then saute until the kale is softened. Add a pinch of salt and remove from the heat.

To assemble:

Scoop out the avocado flesh and mash it onto each of the sourdough toast slices. Place two slices of tomato on top of the avocado. Top with some mushrooms and kale, sprinkle with some salt. Squeeze over a little lemon juice and serve.
