Smoked Tofu, Grilled Capsicum & Cucumber Tortillas
375g block (smoked) tofu, thinly sliced
1 red capsicum, finely sliced
1 tomato, diced
1 cucumber, sliced into ribbons with a peeler
8 tortilla wraps
1 avocado, mashed
1 lime, quartered
1 handful coriander sprigs
4 tbsp sweet chilli sauce
Heat a non-stick frying pan over a high heat. Add the tofu strips and the sliced red capsicum. When the tofu is brown on one side turn the tofu and brown the other side. Add salt and pepper to taste. When the capsicum strips are soft and the tofu browned on both sides remove them both from the pan.
Add a tortilla to the hot pan and heat it on both sides. Remove it from the pan, set aside and repeat with the remaining tortillas.
Meanwhile mash the flesh of 1 avocado. Cut 1 lime into quarters. Pick a handful of coriander leaves.
Place a tablespoon of mashed avocado onto a tortilla and add a few slices of tofu. Add a few sprigs of coriander leaves and some slices red capsicum. Add a some diced tomato, add a couple of ribbons of cucumber, then pour over some sweet chili sauce and serve.
