Super Energy Bowl
1 sweet potato, sliced into thin rounds
1 head of broccoli, cut into bite sized florets
2 carrots, cut into thin matchstick pieces
2 cucumbers, sliced into thin rounds
1 red onion, sliced into thin crescents
2 tomatoes, chopped into quarters
2 beetroot, grated
2 handfuls mixed lettuce leaves
2 avocados. Peeled and sliced
1 handful baby spinach
1½ cups cooked pinto beans
2 cups hummus
salt and pepper
Place the sweet potato into a steam basket and steam over boiling water until tender.
Start by filling a large salad bowl with the the mixed lettuce and baby spinach leaves. Next, arrange the ingredients individually into piles on top of the salad leaves. Place the hummus in the center. Squeeze over the top the juice of 1 lemon. Sprinkle with some salt and pepper and serve.
You can do this in 1 big bowl and everyone can help themselves or make it in 4 individual bowls.
