Kale, Avocado, Pumpkin & Goji Berry Salad

Kale, Avocado, Pumpkin & Goji Berry Salad

(Serves 4)

INGREDIENTS

¼ large pumpkin, chopped into bite size pieces

4 large handfuls kale, roughly chopped

½ red onion

1 cup dried goji berries

¼ cup sunflower seeds

½ cup raw cashew nuts

2 avocados

juice of 1 lemon

1 handful mint leaves

salt and pepper to taste

METHOD

Heat the oven to 200ºC/400ºF.

Place the chopped pumpkin onto a baking sheet, sprinkle with some salt and pepper then place in the oven and bake for 20 minutes.

Place the chopped kale and place in a large bowl, add one cup of dried goji berries. Add a quarter of a cup of sunflower seeds. Add half a cup of raw cashew nuts.

Thinly slice half a red onion into crescents and place into the bowl. Place the the meat of two avocados into the bowl. Add the  juice of one lemon. Add salt and pepper to taste. Mix/mash with your hands so the avocado softens the kale leaves. Remove the pumpkin from the oven. Add the pieces of roasted pumpkin to the bowl. Mix well.

Serve on a platter and enjoy.

Avocado, Arugula & Green Bean Bruschetta

Avocado, Arugula & Green Bean Bruschetta

(Serves 4)

Ingredients:

8 slices sourdough bread

2 handfuls green beans, topped and tailed

1 garlic clove, thinly sliced

1/2 tsp caraway seeds

1 handful arugula (rocket)

2 avocados, mashed

1 lemon, juiced

1 handful sunflower seeds

½ cup water

Method:

Heat a frying pan on a high heat. Place the sourdough slice into the pan and toast on both sides. Remove from the pan and set aside. (Or use a toaster).

Add ½ cup of water to the pan and add the sliced garlic, the beans and the caraway seeds. Stir until the water is absorbed and the beans are bright green.

To serve:

Place the slices of sourdough on a board. Spread each slice with some mashed avocado, then add a few arugula leaves and top with some cooked green beans. Sprinkle with sunflower seeds, squeeze over some lemon juice and then sprinkle with salt and pepper to taste.
