Cauliflower & Pea Soup

(Serves 4)


1 onion, roughly chopped

1 medium cauliflower, roughly chopped

leaves from 1 rosemary sprig

leaves from 1 thyme sprig

1 tbsp fresh oregano leaves

500g frozen peas

6 cups of vegetable stock

salt and pepper to taste


Place the chopped onion, rosemary leaves, thyme leaves, oregano leaves and cauliflower florets into a saucepan Add the frozen peas and six cups of stock.

Place the saucepan onto a high heat, cover with a lid and bring to the boil.

Once the cauliflower has softened, about 10 minutes, remove from the heat, add the cooked vegetables to a blender and puree.

Pour the pureed soup back into the saucepan, stir well and add the seasoning to taste.
