Not Tuna Lettuce Cups

(Serves 4)


3 cups cooked chickpeas, mashed

½ cup gherkins, finely chopped

2 tbsp capers, finely chopped

½ red onion, finely diced

1 handful of parsley, finely chopped

1 cup vegan mayonnaise

1 iceberg lettuce, separated into leaf cups

salt to taste


Mash the chickpeas in a bowl. Add the gherkins, capers, red onion and parsley and mix well.

Add one cup of vegan mayonnaise and add a pinch of salt to taste

and mix well.

Spoon a third of a cup of the ‘not tuna’ into the lettuce leaves and serve, as finger food.

The ‘not tuna’ is great in sandwiches and wraps too.
