Pad Thai   

(Serves 4)


1 carrot, cut into matchsticks

½ onion, sliced into thin crescents

1 tomato, roughly chopped

2 garlic cloves, thinly sliced

375g packet pad thai rice noodles

4 tbsp soy sauce

1 tbsp raw sugar

1 handful bean sprouts

4 eschallots, thinly sliced

1 cup peanuts, roughly chopped

juice of 1 lime

1 handful fresh coriander, roughly chopped

1 small red chilli, thinly sliced (optional)

1 cup water

salt to taste


Place a large pot of boiling water on a high heat. Bring to the boil. Add the rice noodles and cook for 4 minutes. Strain and rinse under cold water.

Heat a wok over a high heat. Add half a cup of water. Add the onion and garlic and sauté until the water is absorbed. Add the carrots, tomatoes and half a cup of water and stir. Add the cooked noodles and stir. Add the raw sugar, soy sauce, peanuts and the eschallots. Add the bean sprouts and the lime juice. Finally add the coriander leaves, stir well. Serve on a platter topped with sliced chilli.
