Potato & Mixed Bean Goulash
1 can mixed beans, drained
2 cans diced tomatoes
4 potatoes, chopped into bite size cubes
1 onion, diced
1 red chilli, sliced (optional)
1 green chilli, sliced (optional)
1 tsp chilli powder
2 to 3 tsp raw sugar
2 cups vegetable stock
salt to taste
2 tbsp cashew nuts or peanuts, chopped
1 tbsp fresh coriander leaves, chopped
1 tsp lemon juice
salt to taste
Heat a saucepan and saute the onion until soft.
Add the tomatoes and chilli, then stir. Add the raw sugar, stir and then cook for 3 minutes.
Add the mixed beans, salt, potatoes, and the peanuts. Then add the lemon juice,
Cover the potatoes and beans with 2 cups of vegetable stock. Stir and cook for 10 minutes covered. Add more water if the mixture is too dry. One the potatoes are soft and the sauce is thickened, remove from the heat and serve. Garnish with chopped coriander leaves.
