Mushroom & Capsicum Fajitas
(Serves 4)
Ingredients:
8 corn tortillas
Mushroom mix:
½ red onion, sliced
2 garlic cloves, minced
1 red capsicum, thinly sliced
10 large mushrooms, thinly sliced
salt & pepper to taste
Salsa:
¼ red onion, finely sliced
1 garlic clove, minced
4 tomatoes, roughly chopped
1 handful of fresh coriander, leaves and stems chopped
pinch of salt
Guacamole:
3 avocados, mashed
1 tomatoes, roughly chopped
1 garlic clove, minced
juice of 2 small limes
pinch of salt
1 tsp red chilli, finely chopped
Method:
Heat a frying pan and saute the onion, garlic and capsicum for two minutes. Add 1 tbsp water and cook until it has evaporated. Add the mushrooms and sauté for two minutes, then add salt and pepper. Mix well and set aside.
For the Salsa:
Place all ingredients into a bowl and mix well with a pinch of salt.
For the Guacamole:
To make the guacamole place the ingredients in a bowl and mix well.
To Serve: Place the salsa, guacamole and the cooked mushroom mixture into separate serving bowls. Place eight corn tortillas on plate. Each person may serve themselves by placing a spoonful of each dish into a tortilla then wrap and enjoy.
