Pea, Kale & Potato Soup

(Serves 4)


1 onion, chopped

2 celery stalks, roughly chopped

3 brussel sprouts, roughly chopped

2 large potatoes, cut into small dice

1 small bunch of kale, roughly chopped

2 cups of frozen peas

8 cups vegetable stock

salt to taste

1 slice sourdough bread


Heat a pan on a high heat and add the chopped potato, onion, celery and brussel sprouts. Add eight cups of vegetable stock, cover with a lid and bring to the boil until the potatoes are soft. Then add the peas and add the chopped kale. Cover with a lid and boil for 5 minutes. Remove from the heat and puree in a blender until smooth. Add salt to taste and serve.
