Avocado, Arugula & Green Bean Bruschetta
8 slices sourdough bread
2 handfuls green beans, topped and tailed
1 garlic clove, thinly sliced
1/2 tsp caraway seeds
1 handful arugula (rocket)
2 avocados, mashed
1 lemon, juiced
1 handful sunflower seeds
½ cup water
Heat a frying pan on a high heat. Place the sourdough slice into the pan and toast on both sides. Remove from the pan and set aside. (Or use a toaster).
Add ½ cup of water to the pan and add the sliced garlic, the beans and the caraway seeds. Stir until the water is absorbed and the beans are bright green.
Place the slices of sourdough on a board. Spread each slice with some mashed avocado, then add a few arugula leaves and top with some cooked green beans. Sprinkle with sunflower seeds, squeeze over some lemon juice and then sprinkle with salt and pepper to taste.
