Sweet Potato Fries with Tartare Sauce

Sweet Potato Fries with Tartare Sauce & Greens

(Serves 2)


2 sweet potatoes, washed and cut into chip shapes

For the Tartare Sauce:

½ cup gherkins, finely chopped

2 tbsp capers, finely chopped

½ red onion, finely chopped

1 handful parsley, finely chopped

1 cup egg free mayonnaise

2 handfuls mixed salad greens

1 lemon, halved


Preheat oven 220º. Cut two sweet potatoes into chip shapes. Place onto a baking tray covered with greaseproof paper. Sprinkle with salt. Place in oven for 25 minutes and remove when cooked through and golden brown.

To make the tartare sauce:

Mix together the tartare sauce ingredients in a bowl with one cup egg free mayonnaise and place into a bowl.

Place some fresh salad leaves on a plate and dress with freshly squeezed lemon juice. Place the sweet potato fries onto the plate and serve with the tartare sauce.
