Spinach, Avocado & Quinoa Salad
(Serves 2)
Ingredients:
1 cup of cooked quinoa
1 red onion, sliced into crescents
1 avocado, diced into chunks
1 lemon, cut in half
2 large handfuls of spinach or kale
salt and pepper to taste
Method:
Place 2 large handfuls of spinach in a bowl, add the sliced red onion and mix well. Add the avocado chunks and massage them into the spinach leaves. Squeeze over the juice of 1 lemon. Add a pinch of salt and pepper to taste. Mix well. Add the cooked quinoa and combine well. To serve, place in a bowl and enjoy.
